1/2 cup Hooks 3 year cheddar (reserve 2 tbsp for topping)
1/2 cup whole milk
1 tsp chopped chives
Salt and Pepper to taste

Instructions:
Heat oven to 350 degrees
In a large saucepan, bring milk, cream and onions to a slight simmer. Add all the cheeses and stir until fully melted. Add pasta and season to taste with salt and pepper. Top with extra cheddar cheese, and some chopped chives for garnish. Place in the oven for 10 minutes or until the topping is melted.
