Skillet Cornbread

Skillet Cornbread
  1. What you’ll need:
    • 3/4 cup Unbleached white or Spelt flour
    • 1/2 tsp. Baking Soda
    • 1 tsp. Baking Powder
    • 1/2 tsp. Fresh cracked pepper
    • 1/2 cup Stone Ground Cornmeal
    • 2 tbsp. Honey
    • 1/3 cup Plain yogurt or sour cream*
    • 1 Extra large egg*
    • 3 tbsp. Bacon drippings or melted butter*
    • *ingredients should be at room temperature
  2. Instructions
    • Preheat oven to 425 Degrees
    • Whisk together flour, baking soda, baking powder and pepper in a medium size bowl, then stir in cornmeal
    • In a separate bowl mix well until shiny honey, yogurt, egg and bacon drippings or butter.
    • Preheat the cast iron pan in the oven with some bacon drippings or butter, just until warm.
    • Stir wet ingredients into dry with only a few strokes. You may add crumbled bacon bits at this time.  Bake for 15-20 minutes or until lightly browned.
    • Variations:
    • Add 1/2 tsp. cayenne, and 3 tbsp. green onions or chives
    • or
    • 1 tbsp finely chopped jalapenos and 1/4 c. grated cheddar
