- What you’ll need:
- 3/4 cup Unbleached white or Spelt flour
- 1/2 tsp. Baking Soda
- 1 tsp. Baking Powder
- 1/2 tsp. Fresh cracked pepper
- 1/2 cup Stone Ground Cornmeal
- 2 tbsp. Honey
- 1/3 cup Plain yogurt or sour cream*
- 1 Extra large egg*
- 3 tbsp. Bacon drippings or melted butter*
- *ingredients should be at room temperature
- Instructions
- Preheat oven to 425 Degrees
- Whisk together flour, baking soda, baking powder and pepper in a medium size bowl, then stir in cornmeal
- In a separate bowl mix well until shiny honey, yogurt, egg and bacon drippings or butter.
- Preheat the cast iron pan in the oven with some bacon drippings or butter, just until warm.
- Stir wet ingredients into dry with only a few strokes. You may add crumbled bacon bits at this time. Bake for 15-20 minutes or until lightly browned.
- Variations:
- Add 1/2 tsp. cayenne, and 3 tbsp. green onions or chives
- or
- 1 tbsp finely chopped jalapenos and 1/4 c. grated cheddar
