What you’ll need:

3 cups cooked orecchiette pasta
1/2 cup heavy cream
1/4 cup caramelized diced onions
1/2 cup Carr Valley Menage*
1/2 cup Hooks 3 year cheddar (reserve 2 tbsp for topping)
1/2 cup whole milk
1 tsp chopped chives
Salt and Pepper to taste
*Carr Valley Menage is a dry texture intensely flavored cheese, substitute accordingly

Put it all together:

Heat oven to 350 degrees

In large sauce pan, heat milk, cream and onions until a slight simmer.  Add cheeses and stir until fully melted.  Add pasta and season to taste with salt and pepper.  Top with extra cheddar cheese, and some chopped chives for garnish. Place in oven for 10 minutes or until topping is melted.
