What you’ll need:

3/4 cup Unbleached white or Spelt flour
1/2 tsp. Baking Soda
1 tsp. Baking Powder
1/2 tsp. Fresh cracked pepper
1/2 cup Stone Ground Corn Meal
2 tbsp. Honey
1/3 cup Plain yogurt or sour cream*
1 Extra large egg*
3 tbsp. Bacon drippings or melted butter*
*ingredients should be at room temperature

Put it all together:

Preheat oven to 425 Degrees

Whisk together flour, baking soda, baking powder and pepper in a medium size bowl, then stir in cornmeal

In a separate bowl mix well until shiny the honey, yogurt, egg and bacon drippings or butter.

Preheat cast iron pan  in oven with some bacon drippings or butter, just until warm.

Stir wet ingredients into dry with only a few strokes. You may add crumbled bacon bits at this time.  Bake for 15-20 minutes or until lightly browned.

Variations:

Add 1/2 tsp. cayenne, and 3 tbsp. green onions or chives

or

1 tbsp finely chopped jalapenos and 1/4 c. grated cheddar
